Fabrice Gillotte is a chocolate genius: he was named Meilleur Ouvrier (Top Artisan) of France at a young age; in 1992, he was awarded the Coq d'or by the Guide des Gourmands, and today he ranks among France's best chocolate makers. He has mastered the technique for turning out astonishingly refined creations made of rigorously selected ingredients. The result gives absolute wonders such as: the box of "Terroirs de Bourgogne" containing four ganaches of regional fruit, or the wooden box filled with "Canaima", a sublime pearl of Venezuelan cocoa bean that delights sweet-eaters. Once you have tasted a number of these delicacies, you can’t resist them: “spice” ganache with gingerbread and select spices; “duality” peach marzipan topped with almond cream and dark chocolate; “caprice” creamed raspberries from Burgundy and dark chocolate; “rocher” almond-hazelnut praline and dark chocolate with milk; “sesame” ganache; “alicante” hazelnut –coriander praline; “valentin” ganache of tarragon herb tea and dark chocolate; also “sensuality” a cream of orange zest and juice with dark chocolate…
